A Bialy (bee-AH-lee) is an Old World bread from Bialystok, Poland. It's shaped like its cousin the bagel, but instead of a hole in the middle, there's a "bowl." Bagels are boiled then baked. Bialys are never boiled, just baked, and have only four ingredients: flour, water, yeast, and sea salt. The classic Bialy is filled with cooked onions and poppyseeds. But since we're Texans operating a pizza shop, we go above and beyond. Old World Bread with Texas Boldness!
